  • 4 day-old croissants 
  • 3 apples 
  • 40 g sugar 
  • 20 g butter 
  • 1 lemon 
  • 2 eggs
  • 50 g sugar
  • 15 cl milk
  • Lemon zest
  • Cinnamon

  • Peel the apples, remove the core, then dice 
  • Melt the butter, add the sugar and caramelise the apples,then deglaze with the lemon juice. 
  • Whisk the eggs with the sugar, milk and the zest of half a lemon in a bowl 
  • Cut the croissant into small pieces, then pour over the mixture to soak
  • Pour the mixture into well-greased tins (individual) 
  • Bake for 10 minutes at 150°C then add the apples and bake for another 10 minutes
  • Arrange on a plate and decorate with a little salted butter caramel for even more indulgence
